THE BEST BROWNIES!

Prepare 9X13 brownie pan by double lining with aluminum foil, leaving foil overhanging on both ends. Butter aluminum foil

Preheat oven to 375 degrees

2 8oz. pkgs. semi sweet chocolate
2 sticks unsalted butter
1/3 cup STRONG brewed coffee
MELT TOGETHER AND COOL TO TEPID

4 large FRESH eggs at room temperature-beat until foamy

1-1/2 cup sugar- add to foamy eggs and beat at medium speed for 2 min.

Slowly add melted chocolate mixture while beating on low until incorporated.

1/2 cup flour, 2 cups of chopped walnuts- stir into above mixture.

Pour into prepared pan-bake at 375 approx 30 minutes- Start checking at 25 minutes - take OUT OF OVEN when a toothpick can be inserted near the center comes out NEARLY clean. DO NOT OVER COOK

Cool on cake rack to room temperature.

Then cool in refrigerator a minimum of 6 hours (overnight is okay)

Remove from pan by lifting out aluminum foil. Peel off foil. Cut into brownies.

Store covered in refrigerator.

STUFFINS

This year I'm trying my hand at "Stuffins"

4 Tbsp light butter melted
1 c liquid egg substitute
1 c Fat-Free reduced sodium chicken broth
1 loaf (16 oz) day old bread (16 slices), cut in 1/2" cubes
1/2 minced scallions
1/2 cup chopped celery
1 c dried cranberries
1/4 c chopped parsley
1 tsp grated lemon peel
1/2 tsp black pepper
1/4 tsp salt
1 tsp poultry seasoning
(prep time 20 min cooking time 25 min)

1.) Preheat oven to 375 F. coat 16 muffin cups with cooking spray. ( do not use paper liners)
In a large bowl, combine butter, egg substitute, and broth. Add remaining ingredients, and toss to combine. Set aside 15 minutes.

2.) Pinch bread; if dry, add 1/4 cup warm water. Toss. Mixture should be soft and spongy, but not mushy. Spoon into muffin cups with an ice cream scoop. Bake 20-25 min ( makes 8 servings )

Per 2 muffins= 256 cal. 9gpro, 45g carb, 5g fat, 10 mg chol, 3g fiber, 493mg sodium.

Bewitching Brownies

Bewitching Brownies

1 cup of shortening
4 (1- ounce) squares of unsweeted chocolate
2 cups of sugar
3 tablespoons of Dark RUM
4 eggs , beaten
1 teaspoon of vanilla extract
1-1/2 cup flour
1/2 teaspoon of salt (a little salt)
3/4 cup of chopped walnuts or pecans (optional)

Melt shortening and chocolate in a double boiler (over simmering water), remove from heat,add sugar and Rum, mixing well, add eggs, vanilla extract and blend, stir in Flour and salt, and then nuts, grease a 13x9x2 pan, bake at 350 degrees 25 minutes.

Now you see why she is smiling!!

My sister sent this recipe to me.
(Rum and nuts are optional I'm sure)

Halloween Tea

I like having Chai Tea in the fall, it has all of the spices that seem so fall like to me.




RECIPE

Chai Tea
6-8 cups of water
1 tbsp dried cardamom
1 tbsp chopped fresh ginger
1/4 tsp whole cloves
1 tsp black peppercorns
1 cinnamon stick
4 tea bags (orange pekoe or peppermint)
Sweetener to taste
Milk to taste
In medium saucepan on high heat add water, cardamom, ginger, cloves, peppercorns, and cinnamon stick. Bring to a boil. Immediately reduce heat and simmer for 5 minutes. Remove from heat and add tea bags, cover pot and allow to steep 5-10. Strain into teapot. Add sweetener and milk to taste.
*Makes 2 - 4 servings.
